Carrots are root vegetables and are claimed to be the perfect health food.

Carrots contain 86-95% of water and around 10% of carbs that contain starch and sugars. Carrots also contain soluble fiber in the form of Pectin that helps in lowering blood sugar levels.

Carrots contain beta-carotene which gets converted into vitamin A by the body. It also contains biotin that helps in fat and protein metabolism. Vitamin K1, potassium, and vitamin B6 are also present in carrots. Other antioxidants that are present in carrots are- Alpha-carotene, Lutein, Lycopene, Polyacetylenes, and Anthocyanins.

Benefits of Carrots

1. Carrots contain Vitamin A whose deficiency can cause xerophthalmia, a progressive eye disease. It can cause difficulty in seeing objects in dim light places. Carrots provide adequate vitamin A and hence prevent blindness in children.

2. Carrots reduce the risk of cancer due to the presence of dietary carotenoids like- Lutein and Zeaxanthin- red, yellow, and orange pigment present in different vegetables.

3. Carrot contains natural sugars in the form of carbohydrates. It is a low-calorie, high-fiber food that is low in sugar. So, it is safe for diabetic people as it's the glycemic index (GI) is low.

4. Carrots contain fiber and potassium which help in relaxing the blood vessels and reducing the risk of high blood pressure and other cardiovascular diseases.

5. Vitamin K1, calcium, and phosphorus present in carrots help in preventing osteoporosis and keeps bones healthy.
