Sweet potato, scientifically known as Ipomoea batatas, is an underground tuber. It is a very nutritious and delicious food that can be eaten as boiled, baked, steamed, or fried. They are found in a variety of colors like- Orange, White, Red, Pink, Violet, Yellow, and Purple.

A medium-sized sweet potato contains 27 grams of carbs which are made of 53% of starches, i.e., Rapidly digested starch, Slowly digested starch, and Resistant Starch. It contains 77% of water content and 3 grams of fiber. Sweet potato supplies a high amount of various vitamins like- Pro-vitamin A (beta carotene), Vitamin C, Potassium, Manganese, Vitamin B6, Vitamin B5, and Vitamin E. Plant compounds like- Beta carotene, Chlorogenic acid, and Anthocyanins.
